Ingredients

  • 2cupswhite sugar

  • 1cupvegetable oil

  • 3largeeggs

  • 2teaspoonsvanilla extract

  • 2 ⅓cupsall-purpose flour

  • 2teaspoonsbaking soda

  • 1teaspoonsalt

  • ¼teaspoonbaking powder

  • 2cupsgrated zucchini

  • 2 ½cupsconfectioners’ sugar, sifted

  • ½cupmargarine

  • 1(3 ounce) packagecream cheese, room temperature

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.

  2. Mix together sugar, oil, eggs, and vanilla in a large bowl until well blended. Combine flour, baking soda, salt, and baking powder in a separate bowl; stir into sugar mixture until well combined. Mix in zucchini. Spread batter evenly into the prepared baking dish.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

  4. Blend together confectioners’ sugar, margarine, and cream cheese in a medium bowl with an electric mixer until smooth. Spread over warm cake. Allow cake to cool completely before cutting into bars.
