Ingredients

  • 1poundcatfish fillets

  • 2 ½cupscoarsely crushed buttery round crackers

  • 1mediumonion, chopped

  • 1largeegg

  • 1tablespooncreamy salad dressing (e.g. Miracle Whip)

  • 1teaspoonprepared yellow mustard

  • ½teaspoonOld Bay Seasoning TM, or to taste

  • ¼cupvegetable oil for frying, or as needed

Cooking Directions

  1. Place catfish in a saucepan with enough water to cover; bring to a boil. Cook until fish flakes easily with a fork. Remove from heat and drain water.

  2. Mash fish in the saucepan. Stir in crackers, onion, egg, salad dressing, mustard, and Old Bay until evenly blended. Form into 8 patties.

  3. Heat oil in a large, heavy skillet over medium-high heat. Fry patties in hot oil until golden brown on both sides. An instant-read thermometer inserted into the center of a patty should read at least 145 degrees F (63 degrees C). Drain on a paper towel-lined plate and serve hot.
